Apple & Cinnamon Muffins

Sugar and spice make ‘apple muffins’ nice. Lovely. I bought mini Granny Smith (green) apples to make a pie but didn’t get to do so, instead I made some cinnamon apple muffins which worked out quiet a treat, and absolutely quick to whip up as well. Cinnamon and apples are just made for each other and this time, I paired the two with chocolate chips. Yum!

Ingredients
makes 8 – 9 muffins  

185g chopped apple (1 large or 2 mini Granny Smith apples)
230 g self-raising flour, sifted
115 g butter
120 g sugar
90g chocolate chips
1 egg
2/3 cups fresh milk
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
pinch of salt
1 teaspoon sugar, extra to coat apples,
1 teaspoon ground cinnamon, extra to coat apples Method  

  1. Preheat oven to 180oC and line muffin tin with 8 – 9 muffin cases
  2. Peel and core the apples and chop to roughly 1cm x 1cm cubes; coat with extra sugar and cinnamon and set aside.
  3. Melt butter in microwave for about 40 seconds; set aside to cool
  4. Combine sifted flour, salt, sugar, ground cinnamon and chocolate chips in a large bowl.
  5. Combine, fresh milk, vanilla extract and egg in a separate cup or bowl; beat liquid with a fork until well mixed.
  6. Make a well in the centre of the dry ingredients; pour in the milk mixture, cooled melted butter and spiced chopped apples. With a large spoon, fold the mixture until well combined.
  7. Spoon into muffin cases and bake in pre-heated oven for 20 minutes.
  8. Place on wire rack to cool.
