‘Cow’ Banana Cake for my Cow-crazed friend

C is a cow enthusiast and we’re not talking merely an ordinary hobby: what we’re dealing here is a cow obsession of world-record-hopeful proportions. Believe it or not there is already a record-holder. However C has never catalogued any of her ‘cowlectibles’ which span across all categories from ornaments, arts and decor to functional crockery and bathroom accessories to outdoor goods and even her car is decked out in cow prints! We have no idea how many cow items she possesses. So cataloging will be a major task once she settles into her new home fondly dubbed ‘Chateau d’ Moo’. Friends and family alike have gathered to help her with the moo-ving process over the past 2 months and there are still lots to be done. So C hosted a mini dinner last night and I baked her a banana cake (cow themed naturally) using her Wilton Cuddles-the-Cow cake pan which I borrowed a few months back.

Yeah I here ya folks! HOLY COW!!!

It was definitely a Mootastical night gorging on cow-shaped nasi lemak  and cow cake in a “Here Moo There Moo Everywhere Moo Moo” setting. Will definitely post a link and update once her entire Cowlection has been catalogued.

But for now, here’s the recipe for the moist banana cake which tastes excellent on its own. Perfect for tea-time.

Banana Cake

The quantities listed below are for a loaf tin measuring about 22cm x 11cm OR a 18cm (17-inch)  round cake tin. For the cow cake, I doubled the recipe amounts.

Ingredients

125 g butter, softened
160 g brown sugar
2 eggs, at room temperature
225 g self-raising flour, sifted
1/2 teaspoon bicarbonate soda, sifted
1 teaspoon mixed spice, sifted
350 g of mashed banana (about 3 large bananas)
60 ml milk

Method

  1. Pre-heat oven to 180oC. Grease and line the base of the loaf or round cake tin.
  2. Beat the butter and sugar with electric beaters until pale, light and fluffy; Beat in eggs one at a time until combined.
  3. Stir in the sifted dry ingredients, mashed banana and milk until well combined.
  4. Spread the mixture in the loaf/cake tin and bake uncovered for 50 minutes (Test for doneness by inserting a skewer – it should come out batter-free)
  5. Remove cake from oven to a cooling rack; let it sit in the tin for 5 minutes before removing cake from tin to cool completely.
